Recipe 42: Homemade Salad Dressing & Marinade


I found this recipe when I was too lazy to go to the store to get a dressing for a Chinese Chicken salad idea I was craving.

Free of any preservatives and chemical additives, this dressing also doubles as a killer marinade for chicken. Add the ingredients to a jam jar, cap it, and shake it up before use and you’ll never go back. :)

Recipe 42: Homemade Salad Dressing & Marinade

Yield: 1 pint

Total time: 5 minutes

Ingredients:

  • 2 tbsp minced ginger
  • 1 tbsp minced garlic (about 3 cloves)
  • 1/4 cup sesame oil
  • 1/2 cup olive oil
  • 1/2 cup soy sauce
  • 1/3 cup rice vinegar (I used white wine vinegar)
  • 3 tbsp honey
  • 1/4 cup water
  • 1/2 tsp chili garlic sauce (optional)

Process:

This is the easy part. Combine all ingredients in a jar that has a lid and shake to combine. Since there are no stabilizers or emulsifiers, it’ll separate after some time, so shake right before using. A tip is to make a double recipe. Trust me, it goes fast. ;)

In general, dressings such as vinaigrettes are really easy to make and are worth some experimentation. I’ve made a raspberry walnut dressing out of oil, vinegar, walnuts, and a bit of raspberry preserves. Trust me when I say that they are truly tasty.
